Ingredients:
2 cups Mexican shredded cheese
1 tomato
3 avocado
2 Spaghetti squash
2 cans of black beans
1 cup sour cream
Taco seasoning, to preference
Optional: 1 pound of ground meat
Instructions:
Get started by preheating your oven to 400 degrees.
To prepare the squash, slice the it in half. Take the seeds out of the middle just like you would a pumpkin, then add your squash halves to a foil lined baking sheet. Once the oven is preheated, place the spaghetti squash in the oven. The squash will need to cook for about forty-five minutes.
While the squash is cooking, this is a perfect moment to begin cooking any desired meat. After adding the meat to a pan, add any desired taco seasoning and begin cooking it over high heat. Be sure to cook it for at least 20 minutes to reduce the risk of food poisoning. Ensure to follow all of the proper food safety guidelines for the selected meat.
As the meat and squash continues to cook, open a can of black beans and drain the water. Pour the black beans into a small saucepan. Thoroughly stir in half a bag of taco seasoning with the beans for flavor. Be sure to keep the beans warm.
To begin preparing your toppings, mix the rest of the taco seasoning into the sour cream and dice the tomato. Slice the avocado and take out the shredded cheese.
When the squash has cooked for forty-five minutes remove the squash from the oven. You will need to scrape the squash with a fork to create the spaghetti like appearance one expects from spaghetti squash. As you scrape the insides of the squash, it should shred.
Once each ingredient has been prepared, add your the beans in the center of the squash. Now add the tomatoes, avocado, cheese, and any other toppings desired. Add a scoop of the sour cream and some optional hot sauce mix. Enjoy.
